Kokum Agal is a traditional, unsweetened extract made from Garcinia indica rinds cured in salt. Unlike the concentrated 100% kokum extract, agal is a gentler form, created through successive extractions that naturally mellow its acidity. Deep red and perfectly balanced, it brings a signature tang to everyday cooking, supports digestion, and naturally tenderises ingredients. A versatile alternative to lime or tamarind, kokum agal carries forward generations of coastal culinary tradition.

• Bullet Point: Kokum – The Functional Charm of the Western Ghats: Made from the fruit of Garcinia indica, native to India’s western coastal belt, agal reflects a balanced expression of this regional ingredient. Compared to the undiluted concentrate, it offers a softer, more rounded acidity while retaining kokum’s inherent functional properties. Across formats and applications, kokum continues to stand out as one of the Konkan region’s most versatile and enduring culinary ingredients. · Natural Coolant with Everyday Digestive Support: Long valued as a refreshing natural coolant, kokum has traditionally been enjoyed after meals as a gut-friendly digestive. In Ayurveda, it is considered a pitta-pacifying ingredient known for helping reduce excess body heat, acidity and inflammation, making it a flavourful and refreshing way to hydrate and rebalance daily. · Versatile Souring Agent & Natural Tenderiser: A clean, fruity alternative to tamarind or lime that brings gentle tang to curries, dals and marinades while naturally helping tenderise proteins and even root vegetables like yam. Beyond sol kadhi, it finds its way into mocktails and fusion drinks, becoming a signature tang that keeps returning to everyday cooking and creative beverages alike. · Rooted in Konkani Culinary Heritage: So deeply intertwined with the Konkan coast that summer feels incomplete without it, kokum Agal finds its way into sol kadhi, kokum saar and simple post-meal digestives. Urban Platter carries this coastal ritual forward by thoughtfully crafting Kokum Agal that keeps the spirit of this refreshed, time-honoured culinary tradition alive.
